I’ve been looking for quick-to-prepare meals for a cooking demo that I’m doing for our Support Group this coming Tuesday night (6:00pm in the Georgetown Community Hospital Solarium if you can make it!).
Initially, I was going to try some shrimp tacos, but then I found this recipe on www.SkinnyTaste.com. Gina’s Zesty Lime Shrimp and Avocado Salad sounded fantastic, healthy and loaded with protein, so I changed my mind about the tacos.
Since I always test meals out on my friends and family before I demo them for patients, I knew I’d have to make this up this week. I was looking forward to it AND I had guinea pigs to try it out on! Lisa and Mickey (my garden partner) are all about eating healthfully. I had my audience.
Zesty Lime Shrimp and Avocado Salad

- 1 lb jumbo cooked shrimp, peeled and deveined, chopped
- 1 medium tomato, diced
- 1 hass avocado, diced
- 1 jalapeno, seeds removed, diced fine
- 1/4 cup chopped red onion
- 2 limes, juice of
- 1 tsp olive oil
- 1 tbsp chopped cilantro
- salt and fresh pepper to taste
I followed this easy recipe, and my results looked just like Gina’s! If you don’t like shrimp, you could make this with imitation crab meat or even chicken. I like shrimp and was thrilled with the results. Mickey and Lisa were, too!
